Monitoring color of seeds as a complementary index of grape ripening for cabernet Sauvignon grown on Santa catarina highlands

Abstract

The aim of this study was to monitor the ripening of the fruits and the seed coloration of the grape variety Cabernet Sauvignon grown in São Joaquim/SC, during the cycles of 2012, 2013 and 2014. The experiment was carried out in a commercial vineyard and samples of Cabernet Sauvignon grapes were collected fortnightly from véraison until harvest on each cycle. Berries were collected from different positions of the clusters in order to extract must for the chemical analysis. Results showed that the soluble solids and acidity were correlated negatively during the course of the berries ripening in all cycles. Polyphenols and anthocyanins were correlated positively in all assessments. The total content of the soluble solids and pH were correlated with the color of the seeds in all cycles, indicating that the visual changes in the seeds follow the evolution of the grape ripening. The results suggest that the assessment of the color of Cabernet Sauvignon grape seeds can be used as an additional berry ripening index facilitating the determination of the harvesting time.
