      Abstract

      With the aim of understanding the variation in starch concentration and flour yield of cassava cultivars recommended for cultivation in Santa Catarina, an experiment was conducted at the Itajaí Experimental Station, SC. ​​It is possible to extend the industrial processing period of cassava by staggering the harvest of cultivars according to their period of maximum starch concentration and flour yield.
