The medium-scale depuration units evaluated in this study successfully met the legal requirements. After 36 hours of depuration, the levels of fecal contamination bacteria, Escherichia coli, in the meat of all oyster samples from all seven cycles monitored were reduced to levels within legal limits. The results also show that both lean and fat oysters had similar survival rates after purification, generally above 80% ten days after purification.
